The Angle Pro has three sharpening stages, but you might not use all of them on every knife. The ceramic wheels are for honing your blade. Passing your knife through the ceramic wheels before you cook may make prepping your ingredients go a little smoother, especially if you’re slicing through soft materials like meat or fruit.
